I don’t remember where I read this question, but I jotted it down and then forgot about it until this past weekend, when I came across it while searching for something entirely different.
Though I looove sour, I can squeeze lemon or lime and drink the juice straight up. I can’t go without umami (anchovies yum) but with a caveat, I would like to slot in coffee (bitter) for good measure.
If I had to pick just one, I think I'd go with saltiness. It enhances everything, and I feel like I’d still get a sense of satisfaction from different foods, even if I lost the rest. Plus, salt is in a lot of umami-rich foods, so maybe I'd get a little overlap!
I lost all taste for awhile due to radiation treatment for head and neck cancer. It was horrible! Salt was the taste I missed the most…and when my taste buds started to come back I was relieved to be able to taste it again!
Umami in the form of anchovies, parmigiano, or beef broth is the base of so many dishes I make, I couldn't be without it. Such an interesting question! I loved reading the other responses.
I would have to choose salty. Salt enhances the flavor in foods. I'm all about flavor. Also, our bodies need salt in order to stay balanced. Over time I would get sick of sweet, sour is not my thing at all and bitter is just above sour to me.
Gotta go salty on this one. Tasting nothing but sweet for the rest of my life sounds like the worst thing right now, considering I have practically been eating cough drops as meals recently 🤒
This is a tough one... I have settled on sour. Since reading Samin Nosrat's Salt, Fat, Heat, Acid, I am obsessed with Acid! Even with my kids sweets, I will nick the sour ones.

I adore sweet and bitter (grapefruit, endive, orange zest/marmalade), but if I had to stick to only one, it's Umami for sure.

Count me in for umami too! Although salty is my go to, the complexity of umami would be more sustaining, I think.
I agree with you, Rebecca - umami for me! Umami also has elements of saltiness, which would be my second choice!

Omg this is difficult. But I think I might have to go salty as well like a few others here. Or maybe umami. Definitely not sour. Tricky!

SO hard, but I think I'd choose salty since seasoning with it is so critical to how a dish tastes
